According to the Chinese-American Tea Association, smaller, more intact leaves usually indicate a high-quality green tea. Some of the more dedicated tea companies will even provide documentation to prove their tea has no pesticide residue—damaging to the tea and to its drinker.
When brewing the second time, less than a minute of brewing is enough, because water penetrated the leaves the first time. But don’t leave any water in the pot after your first or subsequent brews.
Unless you’ve been cut off from all media access for some time, you know that green tea benefits your health. But surprisingly few people have the secret to making green tea in a way that maximizes its delicious flavour.

Drinking Tea for the Health of It
How to Prepare a Better Cup of Green Tea
Black Tea or Green?
Look for airtight packaging [link widoczny dla zalogowanych], and check the packaging date. It’s preferable to use the tea within 12 months of its packaging, and certainly not any more than two years later.
How to Brew Green Tea ProperlyDon’t use unfiltered tap water! It contains chlorine and chemicals such as fluoride that will affect the taste of the tea. (Besides, green tea contains natural fluoride. Japanese reports have shown a reduction in dental cavities among grade-school children who drank green tea after lunch.)Do not use boiling-hot water! This important point is hard to get used to if you’ve been making black tea, but green tea is very delicate. Scalding it in boiling water makes it taste bitter, and causes it to lose its beneficial health properties. Either take the kettle off the heat before it boils, or wait a few minutes after the water has boiled. Either way, if you see steam, the water is still too hot to make green tea. (If you’re the scientific type, the desired temperature is 160-180 degrees Fahrenheit [link widoczny dla zalogowanych], or around 80°C.)Use whole tea, not teabags, for the reasons noted aboveDo not use a metal teapot! If you don’t own a beautiful Japanese teapot or a ceramic regular teapot, a French coffee press will do the job.Use about 2 grams (a heaped teaspoon) of green tea for each cup of water. Brew for a couple of minutes. For individual cups, the Chinese make porcelain “steeping cups.” A steeping cup comes with a lid and contains a porcelain basket. Simply place the tea in the basket, put it in the cup, and add water. Remove the basket before drinking. You can even use a Western tea strainer, or a tiny kitchen sieve. Place the leaves in the sieve, pour the water onto the leaves—and you have instant green tea! Some Additional Points on Making Green Tea
Cheaper green teas, destined for tea bags, consist of crumbled leaves, scraps of leaves and the tea-leaf dust leftover from processing. These inferior green teas have a musty [link widoczny dla zalogowanych], oxidized taste, often masked by manufacturers by adding a strong flavour, such as lemongrass or mint.
The difference in black tea vs. green tea lies in the processing. Fresh, unfermented tea leaves produce green tea. But not all green teas are created equally.
It All Starts with the Green Tea Plant
Actually, all tea starts with the same plant—an evergreen shrub that has the potential to grow as tall as 17 metres. But cultivators prune it to no more than 2 m high, to facilitate easy harvesting.
In China, for example, the first country along with India to cultivate tea, literally hundreds of different green teas exist. They come with exotic names like Jade Sword and Dragon Spirit.
It’s common in China and Japan to drink warm green tea all day long by adding more water to the same leaves.
And if you’re
