Serve onto heated plates and enjoy. This is tasty [link widoczny dla zalogowanych], wholesome, easy and economical. Serve hot buttered toast with the coffee and peruse the Sunday newspapers. This is a totally guilt-free, money-saving culinary experience. A couple of poached eggs on the side of the plate wouldn't go amiss either.
The following recipe was thought up after a long perusal of the contents of a fridge that had been semi-stocked about four days ago. The mushrooms had already been opened, the red onions had been bought a week ago. The potatoes were part of the previous evening's supper. Only the bacon had still to be opened, although this, too, had been bought around four days ago.
A quick look into the larder offered spray oil that had hardly been used and there is always frozen peas in the freezer. (These are best thawed before adding to the Sunday Brunch Potato Scramble!)
This recipe uses up cold, boiled potatoes, marrying them with chopped stir-fried bacon [link widoczny dla zalogowanych], onion and mushrooms. It is quick and easy and makes a marvellously filling, late morning/early afternoon breakfast or lunch. A pot of coffee ready made on the table and the Sunday newspapers finish off a lovely, quiet weekend morning.

Ditto groceries and vegetables that have perhaps lain in the fridge longer than a few days. Much of the "becoming tired" vegetables on the bottom shelf can be used in homely, wholesome cooking, which often does not need much thought or time to prepare.
